You might have heard of diet cola chicken, but have you tried diet cola gammon? Slow-cooking your gammon in diet cola makes it extra succulent, with the perfect balance of sweet and salty. It’s packed with flavour and so tender it’ll fall off your fork!

Slimming World diet cola gammon recipe

ready in 7-8 hours (including time in the slow cooker)
What you need:
1.2kg boneless gammon joint, visible fat removed
1.5 litres diet cola
1kg floury potatoes, such as Maris Piper or King Edward, peeled and cut into thick chips
4 eggs
low-calorie cooking spray
For the coleslaw:
200g cabbage, cored and shredded
2 carrots, coarsely grated
4 tbsp fat-free natural yogurt/fromage frais
4 spring onions, finely shredded
What you do:
1. Put the gammon in the slow cooker. Pour the diet cola over it, then cook on low for 7-8 hours. The gammon is ready when it falls apart easily when pulled with 2 forks.
2. About 40 minutes before you’re ready to eat, preheat your oven to 220°C/fan 200°C/gas 7 and line a baking tray with baking paper. Cook the chips in boiling water for 5 minutes. Drain well, shake in the pan to roughen up the edges, then tip onto the baking sheet. Spray with low-calorie cooking spray, toss well and cook on the top shelf of the oven for 25-30 minutes or until golden.
3. Remove the gammon from the slow cooker, put it on a cutting board and allow it to cool for about 15 minutes.
4. While the gammon is cooling, combine all your coleslaw ingredients in a bowl and fry the eggs to your liking using low-calorie cooking spray.
5. Use 2 forks to shred the gammon into bite-size pieces. Serve with the egg, chips and coleslaw.
