Slimming World chocolate waffles recipe

serves 2 (3 waffles per serving)
7½ Syns per serving
ready in 20 mins
vegetarian

What you need:

2 medium eggs, separated
2 level tbsp cocoa powder
50g self-raising flour
2 x 115g pots fat-free no-added-sugar flavoured yogurt (chocolate, white chocolate, raspberry or vanilla will all work well)
2 level tsp icing sugar, to dust (optional – add 1 Syn per serving)
fresh raspberries, to serve

What you do:

1. Preheat your oven to 220˚C/fan 200˚C/gas 7.

2. Mix the egg yolks, cocoa powder, flour and 4 tbsp yogurt in a bowl until smooth. Whisk the egg whites in a clean bowl until stiff peaks form, then fold through the flour mixture until combined.

3. Divide the mixture between 6 individual silicone waffle moulds.

4. Cook the waffles on a non-stick baking tray in an oven preheated to 220°C/fan 200°C/gas 7 for 7-8 minutes until firm to the touch.

5. Carefully turn the waffles out onto a plate and serve with the remaining yogurt and fresh raspberries. Dust with 2 level tsp of icing sugar, if you like.

Fancy the works?

Add a scoop of this creamy low-Syn vanilla ice cream for a waffle-y good dessert!
