Cosy, slimming-friendly and with a choice of three fab flavours… could this rice pudding get any better? Actually, yes, because our easy recipe is made in your slow cooker – so it can be simmering away while you get on with your day.

Chocolate lovers will enjoy our indulgent-tasting (yet slim-safe) chocolate-orange rice pudding, and the cinnamon and apple is delicious at any time – you could even have it for breakfast. Or perhaps you prefer to keep things simple and go classic vanilla? Whichever flavour’s your fave, you absolutely can sink your spoon into a delicious bowlful with Slimming World.

Slimming World slow cooker rice pudding  

serves 6 
2 Syns per serving 
ready in 3 hours 10 mins 
vegetarian 

What you need: 

175g dried pudding rice  
700ml skimmed milk  
4 level tbsp sweetener granules  

For the vanilla slow cooker rice pudding: 

2 vanilla pods, split in half lengthways  
2 tsp vanilla extract  
500g fresh blackberries (or your favourite fruit), optional 

For the chocolate-orange slow cooker rice pudding (3 Syns per serving):  

1½ level tbsp cocoa powder  
Orange segments  
1 level tbsp chocolate dessert sauce  

For the cinnamon and apple slow cooker rice pudding: 

½ tsp cinnamon  
½ tsp nutmeg  
chopped apple, to serve  
small mint leaves and pared lemon rind, to serve (optional) 

What you do: 

1. Rinse the rice under cold water and drain well. Tip it into your slow cooker with the milk and 500­­ml water, then stir in the sweetener. To make the vanilla rice pudding, scrape the vanilla seeds from the pod and add to the pot with the vanilla extract. To make the chocolate-orange version, stir in the cocoa powder. And to make the cinnamon and apple rice pudding, mix in the cinnamon and nutmeg. 

2. Cook on high for 3-4 hours, or until the rice is tender. If you’re having vanilla rice pudding, stir through the blackberries (or other fruit), if using; if you’re having chocolate-orange rice pudding, top with the orange segments and dessert sauce; if you’re having cinnamon and apple rice pudding, top with the chopped apple, mint leaves and pared lemon rind, if using.
